Minestrone Soup

Soup is my favorite go-to meal. Soup always gives me a warm, cozy feeling and it is also a nice way to get a bunch of vegetables in my diet.  

This Minestrone Soup recipe is loaded with vegetables and broth, my two favorite things for a main meal. I love how this soup has SEVEN veggies in it! Of course, you are more than welcome to add more veggies than what is listed or double the veggies that are in it (hey, if you want a potato-heavy minestrone, go for it! Add more potatoes!). If you have kids who don’t care for spinach, you are in luck: just drop spinach in by the handfuls and watch it shrivel and practically disappear in the soup! If you do not want pasta in your soup, leave it out! This soup is good both with and without the pasta.

Be creative with the spices: that’s part of the fun! Add cheese, or don’t add cheese, that is up to you, but I personally love it with the parmesan, so I added it to the recipe. Asiago bread is the perfect side for this soup, but again, do what you want! I bet it’s good with crackers too! Here is my recipe, I hope you love it as much as I do:
